The mess building is situated at the southeast side of the garrison and its orientation, scale and entrance areas correspond with the surrounding buildings.
With 700 seats Porsanger Garrison's mess has the largest dining capacity in the county of Finnmark and serves both the private soldiers and the officers. Deliveries, storage, production and serving all take place at the same floor with a smooth operational flow from the arrival of raw materials to the table. Food safety and hygiene have high priority and this is reflected in both the layout and choice of materials. An example of this is the location of the staff cloakrooms between the delivery and storage zones and the preparation and cooking zones.
